Banana
or Pineapple Nuggets

1kg
ripe bananas or pineapple, diced

Flour
-
1
X 150 g packet Mary Mack’s Instant Batter
-
300mls
water
-
Oil
(solidified or vegetable)
-
Prepare
batter by adding batter to water and whisk with a fork for
about one minute. Small
lumps may still remain
in the batter but these will disappear when the mixture is cooked.

Flour
banana or pineapple
-
Immerse
into the prepared batter and then into hot oil. If using deep
fry or electric frypan, number
5 or 6 is the suggested
heat control. Fry till coating is crisp, this
should take 3 to 5 minutes. Place cooked nuggets on absorbent
paper.

Serve
nuggets with ice cream sprinkled with sugar and cinnamon.
